PAN-FRIED TROUT WITH BACON (serves 6)

Ingredients:
6 whole trout (pan-dressed)

6 slices of bacon
Salt & pepper (to taste)
6 lemons (each fish)
1 bunch fresh parsley

Cornmeal as needed to dredge

Milk to dredge with cornmeal 


Directions:
Crisp bacon in skillet. Remove from pan. Keep warm. Save grease.
Season the inside of the trout with salt and pepper, dip in milk and dredge in the cornmeal.
Pan-fry the trout in the bacon fat until golden brown on both sides.
Drain fish on absorbent paper and keep warm.
Garnish with bacon, lemon wedges and parsley.

GRILLED STUFFED WHOLE TROUT (serves 6)

Ingredients:

6 whole trout

3 onions, sliced

3 red peppers, sliced

3 portabella mushrooms, sliced

2 oz. oil

4 oz. butter

1 oz. fresh basil leaves

3 lemons

Salt & pepper to taste


Directions:

Fire up the grill.

Salt and pepper inside of the fish, fill the cavity with onions, basil, peppers, mushrooms and butter.

Close the fish and liberally brush with oil

Grill the fish approximately 6 minutes on each side (or until done)

Serve with lemons and basil leaves.

BROILED TROUT ON A BED OF LEEKS (serves 6)

Ingredients:

2-lbs. trout fillets

2 oz. lemon juice

2 oz. vegetable oil

Salt & pepper to taste

4 oz. bread crumbs

10 oz. leeks (sliced on a bias, very thin)

2 oz., butter

5 oz., heavy cream


Directions:

Season the trout with lemon juice, salt and pepper to taste.

Brush trout with the oil

Dredge the fish in the bread crumbs;

Place the trout on a broiler platter and cook through.

Stew the leeks in the butter and cream until they are tender.  

Season to taste with salt and pepper.

Serve the broiled trout on the bed of leeks.

Serve trout with fresh lemon.

BAKED LEMON STUFFED TROUT (serves 6)

Ingredients:

1 whole trout, pan-dressed and de-bonned

1 minced shallot

3 sliced lemons (thin)

1 oz., fresh Parsley sprigs

1 oz., fresh Thyme sprigs

Salt & pepper to taste

Butter, as needed


Directions:

Rub the inside of the fish with shallots and lemon juice.

Add the lemon slices, parsley, thyme, and salt and pepper.

Fold the fish closed and seasoned.  

Place the fish in a buttered baking dish.

Dot the fish with butter

Bake in a 400-degree oven until done, about 15-minutes.

Serve trout with fresh lemon.
